US

From what started as an idea during dinner table kwentuhans, we thought of combining our passion, technique, and expertise on food to have our dream realized. With that in mind, we came up with SUSHI Shokunin, a Japanese cuisine restaurant that opened in May 2021. Using carefully selected ingredients, we can serve high-quality, delectable food that will elevate your dining experience.

 

Building off the inviting yet classy vibe, we hope to use food as a means to satisfy your palate while bringing people together in the process.

Food has always been our passion. 

 

SUSHI Shokunin’s story began decades ago, with a family’s love for good food. Whether in home dinners or high-profile events, the family behind SUSHI Shokunin had always strived to deliver nothing but exceptional food and service. Brining this burning passion, Chef Miguel Antonio Flores (Owner, Executive Chef) began his journey in the world of culinary arts. Through immense training, he grasped the importance of treating food as an artform of its own. In the same light, he fell in love with Japanese cuisine. Having trained in various international Japanese restaurants, Chef Miguel was enchanted with the craftsmanship and discipline that creating Japanese food entailed. It starts with finding the top-quality ingredients, using and mastering the proper techniques, then finding the right balance between innovating and keeping the ingredients’ purity. This ideology was one that Chef Miguel wanted to live by and bring back home to his nation.

STORY

Establishing a restaurant was always something lingering in the minds of the family behind SUSHI Shokunin. It was often the subject of family dinners, parties, and the like. Oftentimes, it was said as they aimlessly dreamed. However, as one continues to practice and work towards perfection, creativity and the desire to serve customers exquisite ideas just become stronger. With passion and discipline, a dream began to turn into reality -- starting from a humble home in Quezon City.  

 

During the first months of the pandemic, Chef Miguel started a small, online business. There was no one serving top-grade sushi for delivery in the area that time, and we wanted to show customers that they could have this experience at home. Using the freshest ingredients and techniques, he proved that you can create an exceptional food experience for customers even in a small back kitchen at home. As it grew bigger, the dreams of creating a restaurant began to feel nearer, more attainable. Suddenly, just like destiny, everything fell into place. The world was blatantly showing us this opportunity, and we took it.  

 

After all the preparation and hard work that came into planning, SUSHI Shokunin finally opened its doors to the public on May 21, 2021. With the mission of carefully sourcing and crafting our food for the customers, each dish was developed with utmost attention to detail. Of equal importance is our belief that food is also a means to bring people together and create a unique experience for them. This was the philosophy behind our Hibachi offerings, where we create a show for the customers as we prepare their food. Each food and experience was meticulously thought of, with our customers and craftsmanship in mind. 

 

Attempting to embody the qualities of a Shokunin, we continue to develop this restaurant as each day passes. Though the challenge of operating in the pandemic was and continues to not be easy, we believe in our food, our people, and our philosophy. Always and in all ways, SUSHI Shokunin strives to provide nothing but the best for our patrons.
